Sear the Chicken
In a large skillet over medium-high heat, add olive oil. Season the chicken thighs with salt and black pepper. When the oil is hot, add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and sear the other side for an additional 5 minutes. Remove from skillet and set aside.
Cook the Sausage
In the same skillet, add the Italian sausage links and cook until browned on all sides, about 5-6 minutes. Remove from skillet and set aside.
Sauté Vegetables
Add the sliced onion, red bell pepper, and green bell pepper to the skillet. Sauté until the vegetables are soft, about 5 minutes. Add the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.
Deglaze the Pan
Pour in the white wine and scrape up any brown bits from the bottom of the skillet. Let it simmer for about 2-3 minutes to reduce slightly.
Combine Ingredients
Return the seared chicken and sausage to the skillet. Pour in the chicken broth. Bring the mixture to a simmer, cover, and let cook for about 25-30 minutes until the chicken is cooked through.
Finish and Serve
Once cooked, sprinkle with fresh parsley before serving. Adjust seasoning with salt and black pepper to taste. Serve hot.
