Prepare the Ingredients
Chop the fresh plum tomatoes and mince the garlic. Slice the prosciutto into thin strips. Set aside.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the Tomatoes and Prosciutto
Add the chopped plum tomatoes and prosciutto to the skillet. Pour in the white wine and let it simmer for about 5-7 minutes, allowing the tomatoes to soften and the flavors to meld.

Combine with Pasta
Add the cooked pasta to the skillet and toss to combine with the tomato and prosciutto mixture. If needed, add reserved pasta water to reach desired consistency.

Season and Serve
