    Saute the Garlic

    In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes

    If using canned plum tomatoes, crush them by hand or with a spoon, then add them to the saucepan. If using fresh tomatoes, chop and add them at this stage.

    Simmer the Sauce

    Bring the sauce to a simmer, then reduce the heat to low. Let it cook uncovered for about 20-30 minutes, stirring occasionally.

    Add Herbs and Cheese

    Stir in the chopped fresh basil, oregano, and grated Romano cheese. Season with salt and black pepper to taste.

    Finish and Serve

    Remove from heat and let it cool slightly. Serve warm with pasta or as a base for other dishes.
