Cheese Filling

Method

Making the Ravioli

  1. 1

    Prepare the Pasta Dough

In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix until the dough starts to come together. Knead the dough for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

  2. 2

    Make the Cheese Filling

In a mixing bowl, combine ricotta, Parmesan, mozzarella, egg yolk, salt, black pepper, and nutmeg. Mix well until smooth and set aside.

  3. 3

    Roll Out the Dough

Divide the dough into four pieces. Roll out one piece at a time on a floured surface until very thin (about 1/16 inch thick).

  4. 4

    Form the Ravioli

Place small spoonfuls of the cheese filling about 1 inch apart on one sheet of rolled dough. Moisten the edges with water, then fold the dough over to create pockets. Press down to seal and cut out individual ravioli.

  5. 5

    Cook the Ravioli

Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

  6. 6

    Serve

Serve the ravioli with your favorite sauce and garnish with fresh herbs or additional cheese if desired.
