Calamari

Method

Preparing the Calamari

    Coat the Calamari

    In a large bowl, mix the flour, salt, and black pepper. Dredge the calamari rings in the flour mixture until fully coated.

    Fry the Calamari

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Making the White Sauce

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Herbs and Clam Juice

    Stir in the chopped herbs and clam juice. Simmer for 5 minutes, allowing the flavors to meld.

Making the Red Sauce

    Sauté the Garlic

    In a separate saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

    Add Remaining Ingredients

    Add crushed red pepper, white wine, and crushed tomatoes. Bring to a simmer and cook for 10-15 minutes, allowing the sauce to thicken.
