    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/8 inch thick) to create shoestring fries.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes. This helps to remove excess starch and ensures crispy fries.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a paper towel. Carefully add a handful of potatoes to the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown.
