    Prepare the Dough

    In a large bowl, mix the flour and a pinch of salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a pan, melt 25 grams of butter over medium heat. Add minced garlic and sauté until fragrant. Add the wild mushrooms and cook until soft. Stir in the spinach and cook until wilted. Remove from heat and let cool. Mix in the ricotta cheese, salt, and pepper.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece thinly using a pasta machine or rolling pin, dusting with flour as needed to prevent sticking.

    Assemble the Ravioli

    Cut the rolled dough into squares or circles. Place a small spoonful of the mushroom-spinach mixture in the center of half of the pieces. Brush the edges with water, then top with the remaining pieces. Press to seal the edges tightly.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Cook the ravioli for 4-5 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

    Prepare the Sauce

    In a saucepan, melt the remaining butter over medium heat. Add heavy cream, grated Parmesan, and chopped herbs. Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper.

    Serve

    Toss the cooked ravioli gently in the sauce. Serve immediately, garnished with additional Parmesan and herbs if desired.
