Cook the Pasta
Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add Mushrooms and Spinach
Add sliced mushrooms to the skillet and cook until soft, about 5 minutes. Then add fresh spinach and cook until wilted.

Combine Chicken and Sauce
Stir in the house-smoked chicken and tomato sauce. Cook for another 2-3 minutes, stirring to combine.

Make it Creamy
Lower the heat and stir in the heavy cream and half of the grated Parmesan cheese. Season with salt and black pepper to taste. Allow to simmer for about 5 minutes.

Combine Pasta and Serve
Add the cooked pappardelle pasta to the sauce and toss to coat. If using shrimp, add cooked shrimp at this stage. Serve hot, topped with remaining Parmesan cheese.
