    Prepare the Potatoes

    Peel and boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and allow to cool slightly.

    Make Potato Croquettes

    Mash the boiled potatoes in a bowl. Add the egg, salt, and pepper, mixing until smooth. Form the mixture into small patties, then roll each patty in breadcrumbs.

    Fry the Croquettes

    Heat olive oil in a skillet over medium heat. Fry the potato croquettes until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

    Cook the NY Strip

    Season the NY Strip steak with salt and pepper. In the same skillet, add a bit more olive oil if needed, and sear the steak over high heat for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for a few minutes before slicing.

    Sauté Seasonal Vegetables

    In the skillet, add butter and minced garlic, then sauté the seasonal vegetables until tender, about 5-7 minutes.
