    Prepare the Onions

    In a large pot, heat the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown (about 30-40 minutes).

    Add Garlic and Broth

    Stir in the minced garlic and cook for 1 minute. Then add the beef broth, white wine, thyme, bay leaf, salt, and pepper. Bring to a simmer.

    Simmer the Soup

    Reduce heat to low and let the soup simmer for at least 30 minutes to allow the flavors to meld. Remove the bay leaf before serving.

    Prepare the Crostini

    While the soup is simmering, preheat the oven to 350°F (175°C). Arrange the baguette slices on a baking sheet, brush with olive oil, and toast in the oven until golden brown, about 10 minutes.

    Serve the Soup

    Ladle the soup into bowls, top with a generous amount of shredded Swiss cheese, and place a toasted crostini on top. Optionally, place under the broiler for a few minutes to melt the cheese.
