Dough Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F) and active dry yeast. Let it sit for 5 minutes until foamy.

Mix Dough
In a large bowl, combine Italian 00 flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic.

Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat Oven
Preheat your wood fire oven to around 800°F (427°C).

Shape Pizza
Once the dough has risen, punch it down and divide it into two equal portions. On a floured surface, stretch each portion into a round pizza shape.

Add Toppings
Spread a thin layer of the tomato sauce on each pizza base. Tear the Fior di Latte cheese into pieces and distribute evenly over the sauce. Add fresh basil leaves.

Bake Pizza
Carefully place the pizza in the wood fire oven and bake for about 90 seconds to 2 minutes, or until the crust is charred and the cheese is melted.

Remove the pizza from the oven, let it cool slightly, then slice and serve hot.
