Method

Pie Crust

  1. 1

    Prepare the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until set. Allow to cool.

Lemon Filling

  1. 2

    Make the lemon filling

In a bowl, whisk together lemon juice, lemon zest, condensed milk, and egg yolks until smooth. Pour the filling into the cooled pie crust.

  2. 3

    Bake the pie

Bake the pie in the preheated oven for 15-20 minutes until the filling is set but slightly jiggly in the center. Remove from the oven and let it cool completely.

Fruit Coulis

  1. 4

    Prepare the raspberry coulis

In a small saucepan, combine raspberry puree, sugar, and water. Heat over medium heat, stirring until the sugar dissolves. Simmer for 5 minutes until slightly thickened. Remove from heat and cool.

  2. 5

    Prepare the strawberry coulis

In another saucepan, combine strawberry puree, sugar, and water. Heat over medium heat, stirring until the sugar dissolves. Simmer for 5 minutes until slightly thickened. Remove from heat and cool.

Serve

  1. 6

    Serve the pie

Once the pie has cooled, slice and serve topped with raspberry and strawberry coulis.
