Method
Prepare the Fish
Season and Cook Lingcod
Rub the lingcod fillets with Cajun seasoning and drizzle with olive oil. Heat a non-stick skillet over medium heat, and cook the fillets for about 4-5 minutes on each side or until cooked through.
Make Potato Salad
Cook Potatoes
Boil baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly before cutting them in half.
Combine Ingredients
In a large bowl, combine the halved potatoes, chopped green onions, parsley, mayonnaise, and Dijon mustard. Season with salt and black pepper. Mix gently until well combined.
Sauté Vegetables
Cook Garden Vegetables
In the same skillet used for the fish, add the mixed garden vegetables and sauté for about 5-7 minutes until tender.
Prepare Red Pepper Coulis
Blend Coulis
In a blender, combine roasted red peppers, garlic, balsamic vinegar, olive oil, and salt. Blend until smooth and creamy.
Plate and Serve
Assemble the Dish
On a plate, serve a portion of warm potato salad, top with sautéed vegetables, and place the Cajun lingcod on the side. Drizzle with red pepper coulis before serving.
