    Prepare the Hollandaise Sauce

    In a saucepan, melt the unsalted butter over low heat. In a separate bowl, whisk together the egg yolks, lemon juice, and salt until pale and frothy. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Stir in cayenne pepper and set aside.

    Poach the Eggs

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Grill the Baguette

    Slice the baguette in half lengthwise and grill until golden brown and crispy.

    Prepare the Salad

    Slice the tomato and toss it with arugula. Drizzle with olive oil, salt, and pepper to taste.

    On each grilled baguette half, layer slices of kassler ham, followed by the poached egg. Drizzle generously with hollandaise sauce. Serve alongside the tomato and arugula salad.
