    Prepare the Steak

    Season the grass-fed tenderloin with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the tenderloin and sear for about 3-4 minutes on each side until desired doneness is reached.

    Make the Sauce

    Remove the steak from the skillet and let it rest. In the same skillet, add the Diane sauce, scraping the bottom to incorporate any drippings. Simmer for 2-3 minutes until slightly thickened.

    While the steak is resting, prepare the potato pavé according to your preferred recipe or method.

    Cook the Vegetables

    Sauté the seasonal vegetables in a little olive oil until tender, about 5-7 minutes.
