    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Toss fingerling potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes until golden and crispy.

    In a skillet over medium heat, cook the apple breakfast sausage until browned, about 5-7 minutes. In the same skillet, cook bacon until crispy, about 3-4 minutes per side. If using kassler ham, heat it in the skillet for about 2-3 minutes.

    Poach or Scramble the Eggs

    For poached eggs, bring a pot of water to a gentle simmer, add a splash of vinegar, and crack the eggs into the water. Cook for about 3-4 minutes. For scrambled, whisk eggs in a bowl, season with salt and pepper, and cook in a non-stick skillet over medium heat, stirring gently, until set.

    Slice the garlic baguette and grill it on a pan or grill until golden and crispy, about 2-3 minutes per side.

    In a bowl, combine chopped tomato and arugula. Drizzle with olive oil, and season with salt and pepper to taste.

    On a plate, arrange the roasted fingerling potatoes, grilled tomato, and the choice of meat. Add the poached or scrambled eggs and serve with the grilled garlic baguette alongside the arugula salad.
