Preparation

    Prepare the Lobster Stock

    In a large pot, melt the butter over medium heat. Add the lobster shells, onion, carrot, celery, and garlic. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for another 2 minutes. Pour in the dry white wine and let it simmer for about 5 minutes, allowing the alcohol to cook off.

    Simmer the Stock

    Add the fish stock (or water) and bring the mixture to a boil. Reduce the heat and let it simmer for 30-40 minutes. Strain the stock to remove the shells and vegetables, returning the liquid to the pot.

Cooking the Bisque

    Add Cream and Seasoning

    Stir in the heavy cream, salt, and black pepper. Let the bisque simmer for an additional 10 minutes.

    Finish with Brandy and Crème Fraîche

    Add the brandy and stir well. Just before serving, whisk in the crème fraîche for added richness.

    Serve with Prawns

    Ladle the bisque into bowls and top each with poached prawns. Enjoy your luxurious lobster bisque!
