Directions

  1. 1

    Cook the Bacon

In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

  2. 2

    Sauté Vegetables

Add the butter to the pot with the bacon fat. Once melted, add the diced onion and celery. Sauté until the onion is translucent, about 5 minutes.

  3. 3

    Add Potatoes and Flour

Stir in the diced potatoes and cook for another 5 minutes. Sprinkle the flour over the vegetables and stir to coat.

  4. 4

    Add Broth and Clams

Slowly add the chicken broth while stirring. Bring to a simmer, then add the chopped clams, thyme, salt, and pepper.

  5. 5

    Simmer the Chowder

Let the chowder simmer for about 15-20 minutes, or until the potatoes are tender.

  6. 6

    Finish with Cream

Stir in the heavy cream and cooked bacon. Let it heat through for another 5 minutes. Adjust seasoning if necessary.

  7. 7

    Serve

Ladle the chowder into bowls and garnish with chopped parsley. Serve hot.
