Coconut Jasmine Rice

Cook the Rice

In a medium saucepan, combine jasmine rice, coconut milk, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and liquid is absorbed. Fluff with a fork and set aside.

Prepare the Poke Bowl

Mix the Ahi Tuna

In a bowl, add the diced ahi tuna and toss with a little salt and any additional seasonings you prefer.

Prepare the Wasabi Mayo

In a small bowl, mix together mayonnaise and wasabi paste until well combined.

Assemble the Bowl

In a serving bowl, start with a base of coconut jasmine rice. Top with edamame, avocado, carrots, radishes, cucumbers, and shredded lettuce. Add the seasoned ahi tuna on top and drizzle with wasabi mayo. Finish with a sprinkle of crispy wontons.
