Cooking Instructions

  1. 1

    Prepare the Egg Batter

In a bowl, whisk together eggs, milk, salt, and black pepper. Dip each sole fillet into the flour, then into the egg mixture, ensuring they are well coated.

  2. 2

    Cook the Sole

In a large skillet, melt half of the butter over medium heat. Add the coated sole fillets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the fillets and keep warm.

  3. 3

    Make the Lemon Butter Sauce

In the same skillet, add the remaining butter and lemon juice. Cook for 2-3 minutes, stirring to combine, until the sauce thickens slightly.

  4. 4

    Prepare the Vegetables

Steam the mixed vegetables until tender, about 5-7 minutes.

  5. 5

    Serve

On a plate, serve the sole fillets topped with lemon butter sauce, alongside whipped potatoes and steamed vegetables.
