Method

Preparation of Whipped Potatoes

    Cook the Potatoes

    In a large pot, add the cubed potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash and whip until smooth and creamy. Set aside.

Preparation of Sauteed Spinach

    Saute the Garlic

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Spinach

    Add fresh spinach to the skillet. Cook until wilted, about 3-4 minutes. Season with salt and pepper. Set aside.

Cooking the Scallops

    Prepare the Scallops

    Wrap each scallop with a slice of prosciutto and secure with a toothpick if necessary.

    Sear the Scallops

    Heat olive oil in a skillet over medium-high heat. Season scallops with salt and pepper. Sear scallops for about 2-3 minutes on each side until golden brown and cooked through.

Serving

    On a plate, create a bed of whipped potatoes, top with sautéed spinach, and arrange the seared scallops on top. Serve immediately.
