Arroz (Rice)

Purê de Batatas (Mashed Potatoes)

Preparation

Rabada Preparation

1. Sear the Oxtail

In a large pot, heat the olive oil over medium heat. Add the oxtail pieces and sear until browned on all sides.

2. Sauté Vegetables

Add chopped onions, minced garlic, sliced carrots, and chopped celery to the pot. Sauté until the vegetables are softened.

3. Add Flavorings

Stir in the tomato paste, bay leaves, black pepper, and salt to taste.

4. Add Broth and Simmer

Pour in the beef broth and bring to a simmer. Cover and cook on low heat for about 2-3 hours until the meat is tender.

Arroz Preparation

5. Cook the Rice

In a saucepan, combine the rice, water, and salt. Bring to a boil, then reduce to low heat, cover, and simmer for about 15-20 minutes until the rice is cooked and water is absorbed.

Purê de Batatas Preparation

6. Prepare the Potatoes

Peel and cut the potatoes into chunks. Boil in salted water until tender, about 20 minutes.

7. Mash and Mix

Drain the potatoes and return to the pot. Add butter, milk, and salt to taste. Mash until smooth and creamy.
