    Prepare the Potatoes

    Peel the potatoes and slice them into very thin strips using a mandoline or knife.

    Soak the Potatoes

    Place the sliced potatoes in a bowl of cold water for about 30 minutes to remove excess starch. Drain and pat them dry with a clean towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil. Fry them in batches, avoiding overcrowding the pot. Fry until golden brown and crispy, about 3-5 minutes.
