1. Preparing the Bacalao

Soak the salted cod in water for 24-48 hours, changing the water every 8 hours to remove excess salt. After soaking, drain and pat dry.

2. Prepping the Vegetables

Finely chop the garlic, onion, and bell pepper.

3. Cooking the Bacalao

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until they are translucent. Add the bell pepper and continue to cook for another 5 minutes.

4. Baking the Bacalao

Add the soaked bacalao to the skillet, season with salt and pepper, and gently toss with the vegetables. Transfer everything to a baking dish and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes.

5. Finishing Touches

Remove from the oven, sprinkle with chopped parsley and black olives before serving.
