Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Vegetables
In a large bowl, combine the broccoli, cauliflower, and grape tomatoes. Drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.

Roast the Vegetables
Spread the vegetable mixture onto a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly charred, stirring halfway through.

Prepare Lime Sour Cream
While the vegetables are roasting, mix the sour cream and lime juice in a small bowl. Set aside.

Finish the Dish
Once the vegetables are done roasting, remove them from the oven and drizzle with truffle oil. Add the fresh herbs and toss gently.

Optional Eggs
If you choose to add eggs, fry or poach them to your liking. Serve the veggie hash topped with the lime sour cream and eggs, if using.
