Preparation Instructions

  1. 1

    Cook the Rice

In a pot, combine the brown rice, turmeric, and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and water is absorbed.

  2. 2

    Prepare the Beans

While the rice is cooking, rinse and drain the black beans. Heat a pan over medium heat, add the beans, and season with salt and pepper. Cook for about 5-7 minutes until heated through.

  3. 3

    Prepare the Lime Sour Cream

In a bowl, mix the sour cream, lime juice, and a pinch of salt until well combined.

  4. 4

    Assemble the Burritos

Lay out a tortilla and layer with a scoop of turmeric rice, seasoned black beans, roasted corn, shredded cheddar cheese, guacamole, chopped cilantro, and a drizzle of sambal. If using, add the blackened chicken.

  5. 5

    Wrap and Serve

Fold in the sides of the tortilla and roll it up tightly. Repeat with the remaining tortillas. Serve the burritos with salsa on the side for dipping.
