    Prepare the Crispy Smashed Potatoes

    Preheat your oven to 425°F (220°C). Boil the diced potatoes in salted water for about 10-15 minutes until fork-tender. Drain and let them cool slightly.

    Make the Scrambled Eggs

    In a bowl, whisk together the cage-free eggs, salt, and pepper. Heat a non-stick skillet over medium heat and add a splash of olive oil. Pour in the egg mixture and gently stir with a spatula until the eggs are softly scrambled and just cooked through. Add in the fresh spinach and cook for another minute until wilted.

    Assemble the Sandwich

    Toast the sourdough slices until golden brown. On two slices, spread a generous amount of guacamole, then layer the scrambled eggs with spinach, and top with cheddar cheese. Add salsa on top of the cheese, and finally, place the remaining slices of sourdough on top.

    Serve the Power Avo Sandwich hot with a side of crispy smashed potatoes and garnish with chopped parsley.
