Momo Preparation

    Prepare the Filling

    In a large bowl, combine ground chicken, chopped onion, minced garlic, minced ginger, chopped cilantro, green chili, salt, pepper, garam masala, and lemon juice. Mix thoroughly until well combined.

    Prepare the Dough

    In another bowl, combine all-purpose flour and a pinch of salt. Gradually add water and knead until a smooth dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

    Assemble the Momos

    Divide the dough into small balls. Roll each ball into a thin circle. Place a spoonful of the chicken filling in the center, fold the dough over the filling, and pleat to seal the momo tightly.

    Cook the Momos

    In a steamer, arrange the momos and steam for about 15-20 minutes or until the chicken is fully cooked and the dough is tender.

    Prepare Tandoori Marinade

    In a bowl, mix yogurt, tandoori masala, lemon juice, and salt. Add the steamed momos to the marinade and coat them evenly. Let them marinate for at least 30 minutes.

    Grill the Momos

    Preheat a grill or oven. Place the marinated momos on the grill and cook for about 10-12 minutes, turning occasionally until they have a nice char.

    Serve hot with mint chutney or your favorite dipping sauce.
