    Prepare the Noodles

    Boil the chowmein noodles in salted water according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Cook the Sukuti

    In a skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the sukuti and stir-fry for about 3-4 minutes until heated through and slightly crispy. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of oil. Add the sliced onion, garlic, and ginger, and sauté until the onion becomes translucent. Add the bell pepper and carrot, and stir-fry for another 2-3 minutes until the vegetables are tender.

    Combine Ingredients

    Return the cooked sukuti to the skillet with the vegetables. Add the drained chowmein noodles, soy sauce, black pepper, and salt. Toss everything together, ensuring the noodles are well coated and heated through.

    Garnish and Serve

    Remove from heat and garnish with chopped spring onions. Serve hot.
