    Marinate the Chicken

    In a large bowl, combine the Jamaican jerk seasoning, olive oil, lime juice, minced garlic, fresh thyme, salt, and black pepper. Add the chicken thighs, ensuring they are well coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Chicken

    Preheat your grill or oven to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C). If using an oven, place the chicken on a baking sheet and bake for 25-30 minutes.

    Once cooked, remove the chicken from the heat and let it rest for 5 minutes. Serve with your choice of sides such as rice and peas, fried plantains, or a fresh salad.
