Method

Goat Curry

    Prepare the Marinade

    In a large bowl, mix the goat meat with turmeric, coriander, cumin, chili powder, and salt. Let it marinate for at least 1 hour.

    Cook the Curry

    In a large pot, heat oil over medium heat. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook for 2 minutes.

    Add Tomato and Goat

    Stir in the pureed tomato and cook for another 5 minutes. Add the marinated goat meat, stirring well to coat. Pour in the water, cover, and simmer for about 1.5 hours or until the goat is tender.

    Finish the Curry

    Once the meat is tender, stir in garam masala and chopped cilantro. Adjust salt to taste and simmer for an additional 5 minutes.

Rice

    Cook the Rice

    Rinse basmati rice under cold water until water runs clear. In a pot, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and cook for 15-20 minutes or until rice is fluffy.

Dal

    Cook the Dal

    In a pot, combine red lentils, water, turmeric, and salt. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are soft. In a separate pan, heat oil, add cumin seeds, and cook until fragrant. Pour over cooked dal and garnish with cilantro.

    Serve the goat curry, rice, and dal with pickle, sautéed greens, and yogurt on the side.
