Chicken Curry

    Prepare the Chicken Curry

    Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle. Add chopped onions and sauté until golden brown. Stir in ginger-garlic paste, cook for a minute, then add the pureed tomatoes. Cook until oil separates.

    Add Spices and Chicken

    Add turmeric, red chili powder, coriander powder, and salt. Mix well, then add chicken pieces. Cook until chicken is browned, then add water. Cover and simmer until chicken is cooked through.

    Finish the Curry

    Once the chicken is cooked, garnish with chopped cilantro before serving.

    Cook the Lentils

    In a pot, combine lentils, water, turmeric, and salt. Bring to a boil, then reduce heat and simmer until lentils are soft.

    Prepare Tempering

    In a small pan, heat oil or ghee. Add cumin seeds and minced garlic. Sauté until garlic is golden, then pour over the cooked lentils.

Rice

    Cook the Rice

    Rinse basmati rice under cold water until water runs clear. In a pot, combine rice, water, and salt. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes or until water is absorbed.

Assemble the Thali

    Serve the Thali

    On a large platter, serve a portion of chicken curry, dal, rice, and arrange assorted side dishes. Enjoy your traditional Nepali Thali!
