Lamb Shank Preparation

    Sear the Lamb

    In a large pot, heat some olive oil over medium-high heat. Season the lamb shanks with salt and black pepper, then sear them until browned on all sides, about 8-10 minutes. Remove lamb shanks and set aside.

    Cook the Vegetables

    In the same pot, add chopped onions, garlic, carrots, and celery. Cook for about 5-7 minutes until softened.

    Deglaze and Braise

    Pour in the red wine and bring to a boil, scraping the bottom of the pot. Add the stock, bay leaves, thyme, and the seared lamb shanks. Bring to a simmer, cover, and braise in the oven at 325°F (163°C) for 2-2.5 hours, until the meat is tender.

Ghee Rice Preparation

    Toast the Rice

    In a separate pot, heat ghee over medium heat. Add cumin seeds and toast for 1 minute. Add the basmati rice and sauté for 2-3 minutes.

    Cook the Rice

    Add water and salt to the rice. Bring to a boil, then reduce heat to low, cover, and cook for 15-20 minutes until the rice is fluffy and water is absorbed.

Yogurt Sauce Preparation

    Mix the Sauce

    In a bowl, combine plain yogurt, grated cucumber, minced garlic, salt, and fresh dill. Mix well and adjust seasoning to taste.
