In a large bowl, season the chicken thighs with salt, pepper, and half of the Himalayan spice blend. Let it marinate for at least 30 minutes.

Cook the Onions
In a large skillet, melt the butter over medium heat. Add the chopped onions and sauté until they are soft and translucent.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

Cook the Chicken
Add the marinated chicken to the skillet and cook until browned on all sides, about 6-8 minutes.

Add Tomato Puree and Cream
Pour in the tomato puree and heavy cream, and stir to combine. Bring the mixture to a gentle simmer.

Add the remaining Himalayan spice blend, salt, and black pepper. Let the sauce simmer for about 15-20 minutes, until the chicken is cooked through and the sauce thickens.
