    Prepare the Noodles

    Boil the chowmein noodles in salted water according to package instructions until al dente. Drain and set aside.

    Cook the Chicken

    In a large pan or wok, heat vegetable oil over medium-high heat. Add the sliced chicken breast and cook until golden brown and fully cooked. Remove and set aside.

    Stir-Fry the Vegetables

    In the same pan, add a little more oil if necessary. Add minced garlic and ginger, sauté for 30 seconds. Then add bell pepper, carrot, and cabbage. Stir-fry for about 3-4 minutes until the vegetables are slightly tender but still crisp.

    Combine Ingredients

    Add the cooked chicken back into the pan along with the boiled noodles. Pour in the soy sauce and season with salt and black pepper to taste. Toss everything together for about 2-3 minutes until well mixed and heated through.

    Garnish and Serve

    Remove from heat, garnish with chopped spring onions, and serve hot.
