Cook the Chicken
In a pot, boil the chicken breast in salted water until fully cooked (about 15-20 minutes). Remove from water, let cool, and shred into fine pieces.

Prepare the Filling
In a large bowl, combine the shredded chicken, grated carrot, shredded cabbage, chopped bell pepper, minced garlic, minced ginger, soy sauce, black pepper, and salt. Mix well until all ingredients are evenly combined.

Assemble the Spring Rolls
Take a spring roll wrapper and place about 2 tablespoons of the filling near one corner. Fold the corner over the filling, then fold in the sides and roll tightly to enclose the filling. Use a little water to seal the edge.

Fry the Spring Rolls
In a deep pan or fryer, heat oil over medium heat. Carefully add the spring rolls in batches and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot with dipping sauce of your choice.
