Prepare the Base

In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are tender.

Add Garlic and Tomatoes

Stir in the minced garlic and cook for an additional 1-2 minutes. Then, add the canned diced tomatoes and stir well.

Add Broth and Seasoning

Pour in the chicken broth, bay leaves, dried thyme, cayenne pepper, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.

Add Seafood

After the gumbo has simmered, add your choice of seafood (like shrimp, crab, and mussels) and cook for an additional 10 minutes until the seafood is cooked through.

Serve

Remove bay leaves and serve the gumbo hot, garnished with green onions if desired.
