    Gather all ingredients and prepare them as listed. Ensure the rice is cold and cooked, preferably a day old for best texture.

    Cook the Sausage

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the Andouille sausage and cook for about 5 minutes until browned and heated through. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced bell pepper and minced garlic. Sauté for about 3 minutes until the vegetables are tender.

    Cook the Shrimp

    Add the peeled and deveined shrimp to the skillet. Cook for about 3-4 minutes until the shrimp are pink and opaque. Season with Cajun seasoning (paprika, cayenne, oregano, thyme, salt, and black pepper). Stir to combine.

    Add the Rice

    Add the cold cooked rice to the skillet. Stir well to combine all ingredients, breaking up any clumps of rice. Cook for about 5 minutes, allowing the rice to heat through.

    Scramble the Eggs

    Create a well in the center of the rice mixture and pour in the beaten eggs. Allow them to sit for about 30 seconds, then scramble until cooked. Mix everything together.

    Finish with Sauce

    Pour the soy sauce and hot sauce over the rice mixture. Stir well to evenly coat all ingredients. Adjust seasoning to taste.
