Shrimp Preparation

    Prepare the Poaching Liquid

    In a large pot, combine 4 cups of water, the halved lemon, Old Bay seasoning, and salt. Bring the mixture to a boil over medium-high heat.

    Poach the Shrimp

    Once the water is boiling, add the peeled and deveined jumbo shrimp. Cook for about 2-3 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook.

    Chill the Shrimp

    Remove the pot from heat and transfer the shrimp to an ice bath (a bowl filled with ice water) to stop the cooking process. Let them cool for about 5 minutes.

    Mix the Sauce

    In a medium bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir well until fully combined.

    Taste the sauce and add salt as needed to enhance the flavor. Adjust the hot sauce for desired spiciness.

Presentation

    Plate the Shrimp

    Arrange the chilled shrimp on a serving platter in a circular pattern or in a decorative style.
