Preparation of Cajun Spice Mix

    Make the Cajun Spice Mix

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Mix well and set aside.

Cooking the Lobster

    Prepare the Pot

    In a large pot, bring 4 liters of water to a boil. Add 1 cup of sea salt and stir until dissolved.

    Cook the Lobster

    Once the water is boiling, carefully add the live Boston lobsters headfirst into the pot. Cover the pot and cook for about 8-10 minutes for the first lobster and 10-12 minutes for the second lobster, depending on their size.

    Check Doneness

    The lobsters are done when they turn a bright red color and their shells are firm. The meat should be opaque and white when fully cooked.

    Prepare for Serving

    Carefully remove the lobsters from the pot using tongs and place them on a cutting board. Let them cool slightly before handling.

    Apply Cajun Spice

    Melt butter in a small saucepan over low heat. Mix in the prepared Cajun spice mix into the melted butter. Brush the Cajun butter mixture generously over the lobster meat.

    Serve

    Cut the lobsters in half lengthwise for serving. Squeeze fresh lemon juice over the top and serve immediately with additional melted butter on the side.
