Potato Preparation

Method

Potato Preparation

  1. 1

    Slice the Potatoes

Wash the Russet potatoes thoroughly under cold water. Peel them if desired. Cut the potatoes into thin strips, about 1/4 inch thick, to resemble French fries.

  2. 2

    Soak the Potatoes

Place the cut potato strips in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

  3. 3

    Season the Fries

Drain the soaked potatoes and pat them dry with a paper towel. In a large bowl, toss the potato strips with salt and pepper until evenly coated.

Frying

  1. 4

    Heat the Oil

In a large deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Potatoes

Carefully add a handful of the potato strips to the hot oil (do not overcrowd the pot) and fry for about 4-5 minutes, or until golden brown and crispy. Remove them with a slotted spoon and let them drain on paper towels.

  3. 6

    Repeat

Repeat the frying process with the remaining potato strips in batches, ensuring the oil temperature remains consistent.

Dipping Sauce

  1. 7

    Prepare the Dipping Sauce

In a small bowl, mix together the ketchup and mayonnaise until well combined. Serve alongside the fries for dipping.
