Calamari Preparation

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to create the breading mixture.

In another bowl, whisk together the eggs and buttermilk until smooth.

Dip each calamari ring into the egg mixture, allowing excess to drip off, then coat it in the breading mixture. Ensure each piece is well coated.

Place the breaded calamari on a baking sheet while you prepare to fry them.
Frying

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C). You can check the temperature using a deep-fry thermometer.

Carefully add a few calamari rings to the hot oil, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until they turn golden brown.

Using a slotted spoon, remove the fried calamari from the oil and place on a paper towel-lined plate to drain any excess oil.

Repeat the frying process with the remaining calamari.
Tartar Sauce Preparation

In a small bowl, combine the mayonnaise, relish, lemon juice, capers (if using), salt, and black pepper.

Stir until well combined. Adjust seasoning to taste.
