Crawfish Preparation

    Clean the Crawfish

    In a large container, dissolve salt in water. Add live crawfish to the container and let them soak for about 20 minutes to purge any mud and impurities.

    Rinse the Crawfish

    After soaking, drain the crawfish and rinse them thoroughly with fresh water to remove any remaining salt and debris.

    Prepare the Lemons

    Cut the lemons in half and set aside for later use in the boiling process.

Cooking

    Boil the Water

    In a large pot, bring 10 gallons of water to a rolling boil over high heat.

    Add Seasonings

    Once the water is boiling, add the Cajun seasoning, garlic powder, onion powder, and halved lemons. Stir well to combine.

    Add Vegetables

    Add the potatoes, corn on the cob, garlic cloves, celery, and onions to the boiling pot. Cook for about 10-15 minutes or until the vegetables are tender.

    Cook the Crawfish

    Add the cleaned crawfish to the pot, cover, and boil for an additional 3-5 minutes until the crawfish turn bright red.

    Add Hot Sauce

    If desired, add hot sauce to taste at this point for an extra kick.

    Turn off the heat and let the crawfish and vegetables soak in the seasoned water for 10-15 minutes for enhanced flavor.
