Prepare the Ingredients
Start by gathering all ingredients. Chop the green onions (both the white and green parts) finely. If using leftover rice, ensure it is cooled and clumped together.

Heat the Wok
Place a large wok or non-stick skillet over high heat. Add 2 tablespoons of vegetable oil and allow it to heat until shimmering.

Cook the Eggs
Crack the 2 large eggs into the hot wok and scramble them quickly with a spatula until fully cooked. Remove the eggs from the wok and set aside.

Stir-fry the Ingredients
Add the chopped green onions to the wok, stir-frying for about 30 seconds until fragrant. Then, add the cooked rice, breaking up any clumps with your spatula.

Add Crab and Seasoning
Pour in the 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Stir well to incorporate the flavors. Add the crab meat and mix gently to avoid breaking it apart.

Remove the fried rice from heat and serve hot, garnished with additional chopped green onions if desired.
