Prepare the chicken
In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast and season with salt and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

In the same skillet, add another tablespoon of olive oil. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the cooked rice to the skillet along with the cooked chicken, frozen peas, Cajun seasoning, and soy sauce. Stir well to combine all ingredients and cook for another 5-7 minutes, allowing the rice to heat through and absorb the flavors.

Finally, fold in the sliced green onions and adjust seasoning with additional salt and black pepper if needed. Serve hot.
