    Clean the Mussels

    Rinse the black mussels under cold water, scrubbing the shells with a brush to remove any debris. Remove any beards (the fibrous threads attached to the shells). Discard any mussels that are open and do not close when tapped.

    Prepare the Cajun Spice Mix

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well to ensure the spices are evenly combined.

    Sauté the Aromatics

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-4 minutes.

    Add the Mussels and Spice Mix

    Add the cleaned mussels to the pot along with the prepared Cajun spice mix. Stir well to coat the mussels with the spices and aromatics.

    Steam the Mussels

    Pour in enough water (about 1 cup) or white wine to steam the mussels. Cover the pot with a lid and increase the heat to high. Cook for about 5-7 minutes, or until the mussels have opened up.

    Finish and Serve

    Once cooked, remove the pot from heat. Discard any mussels that did not open. Squeeze fresh lemon juice over the mussels and garnish with chopped parsley before serving.
