Method

Preparation of Alligator Bites

  1. 1

    Marinate the Alligator Meat

In a medium bowl, soak the bite-sized alligator meat pieces in buttermilk. Allow it to marinate for at least 1 hour in the refrigerator to tenderize the meat and enhance the flavor.

  2. 2

    Prepare the Breading

In a separate bowl, combine the all-purpose flour, Cajun seasoning, salt, and black pepper. Mix well to ensure an even distribution of the spices.

Frying Process

  1. 3

    Heat the Oil

In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

  2. 4

    Coat the Alligator Pieces

Remove the alligator pieces from the buttermilk, allowing any excess liquid to drip off. Dredge each piece in the seasoned flour mixture, ensuring they are fully coated. Shake off any excess flour.

  3. 5

    Fry the Alligator Bites

Carefully place the coated alligator pieces into the hot oil, being cautious not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the bites and place them on paper towels to drain excess oil.

  4. 6

    Serve

Serve the alligator bites hot, accompanied by your favorite dipping sauce, such as remoulade or a spicy aioli.
