Method

Preparation

  1. 1

    Clean the Mussels

Rinse the black mussels under cold water to remove any dirt or debris. Scrub the shells with a brush to ensure they are clean. Remove any beards (the fibrous strands) by pulling them firmly.

  2. 2

    Mince Garlic and Chop Parsley

Peel and mince the garlic cloves finely. Rinse the fresh parsley, dry it, and chop it coarsely.

  3. 3

    Prepare the Lemon

Cut the lemon in half. Set one half aside for squeezing later and cut the other half into wedges for garnish.

Cooking

  1. 4

    Sauté the Garlic

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  2. 5

    Add the Mussels

Add the cleaned black mussels to the pot and stir to coat them in the garlic oil.

  3. 6

    Deglaze with White Wine

Pour the white wine into the pot, cover with a lid, and increase the heat to high. Allow the mussels to steam for about 5-7 minutes or until they open up.

  4. 7

    Season and Garnish

Once the mussels are open, remove from heat. Season with salt and black pepper to taste, and sprinkle with chopped parsley. Squeeze fresh lemon juice over the mussels before serving.
