I spend the majority of my time in this restaurant and when I tell folks my go-to order, this is IT. It’s light and refreshing, not too heavy, perfectly paired with Tzatziki… so good! Great for a breakfast, brunch, or lunch.

Burrito Preparation
Prepare the Filling
In a bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, spinach, feta cheese, and dill. Drizzle with olive oil and lemon juice, and season with salt and pepper to taste.
Assemble the Burrito
Lay the large flour tortilla flat on a clean surface. Spoon the quinoa mixture onto the center of the tortilla. Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to form a burrito.
Serve
Cut the burrito in half if desired, and serve with a side of tzatziki sauce for dipping.
