Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt and slowly stir in 1 cup of grits. Reduce heat and simmer for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy. Stir in 1 cup of crumbled blue cheese until melted and combined. Set aside.

Cook the Pork

In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork and cook until browned and cooked through, about 6-8 minutes per side. Remove from the skillet and let it rest for a few minutes before slicing.

Sauté the Greens

In the same skillet, add the minced garlic and sauté for about 30 seconds. Add the mixed greens and cook until wilted, about 3-5 minutes. Season with black pepper to taste.

Assemble the Dish

On each plate, spoon a generous serving of the cheesy grits. Top with sliced pork and sautéed greens. Serve hot and enjoy!
